Frozen Watermelon Lime Bars (Printable)

Cool, vibrant no-bake dessert with sweet watermelon and zesty lime. Ready in 20 minutes.

# What you'll need:

→ Fruit & Juice

01 - 4 cups seedless watermelon, cubed
02 - 1/3 cup freshly squeezed lime juice (about 3-4 limes)
03 - 2 teaspoons finely grated lime zest

→ Sweetener

04 - 1/2 cup granulated sugar (or honey/agave for natural sweetener)

→ Optional Garnishes

05 - 1/4 cup finely chopped fresh mint
06 - Lime wedges (for serving)

# How to make it:

01 - Line an 8x8-inch baking pan with parchment paper, allowing overhang on all sides for easy removal of the frozen bars.
02 - Combine watermelon cubes, lime juice, lime zest, and sugar in a blender. Blend until completely smooth and no fruit chunks remain.
03 - Taste the mixture and adjust sweetness or lime intensity according to personal preference.
04 - Pour the smooth puree into the prepared pan. Tap the pan gently on the counter to release air bubbles and level the surface.
05 - Place the pan in the freezer for 4 hours or until completely firm and set throughout.
06 - Lift the frozen block from the pan using the parchment overhang. Use a sharp knife to cut into 12 even bars, wiping the knife clean between cuts if needed.
07 - Top bars with fresh chopped mint and lime wedges immediately before serving, if desired. Serve frozen.

# Expert Tips:

01 -
  • They taste like summer captured in a frozen bite
  • The prep takes less time than loading the dishwasher
02 -
  • Let the bars sit at room temperature for three minutes before cutting or they will crack
  • The texture is best eaten within three days before ice crystals form
03 -
  • Use very ripe watermelon for the sweetest flavor
  • Freeze the pan for 15 minutes before pouring to help the bars set faster
